SIX YEARS OF QUIETLY:
It was late Spring 2019 that we first fired up the Probat and roasted our very first batches! It has become a yearly tradition to celebrate our anniversary with a coffee that brings all the nostalgic glee of a birthday. Think too much cake, best friends, party bags, crowded swimming pools and dance parties. For year six, we are bringing back Jaun Martin! It is a special farm for Quietly because we roasted their coffee for the 2022 World AeroPress Championship!

ORIGIN:
Juan Martin is owned and operated by Banexport, who focuses on innovation and experimentation with rare varietals. We have previously featured their exciting Striped Red Bourbon but for the birthday we wanted to go with a crop that really embodies the birthday flavours, so are ecstatic to offer a washed gesha lot! 

Beyond the cultivation of rare offerings, Juan Martin serves as a resource and example for coffee producers that sell and export their coffees through Banexport. Located in the highest area of Sotara, just 30 mins from Cauca's capital of Popayan, Juan Martin is dedicated to developing environmentally-conscious practices as well as providing jobs to community members with educational opportunities. 

Various maintenance tasks are carried out at Juan Martín Farm: soil conservation is done because of the steep slope of the farm; undergrowth is allowed to grow to avoid erosion; evaluations are made on coffee crops to identify pests or diseases and eliminate them; the surface of the tree is cleaned every 75 days and coffee the space between rows is cleared with a scythe every 2 months.

FLAVOUR:
This was a perfect fit for the AeroPress competition and Birthday Cake given its wide swath of festive and fun flavours. When I first tasted its Saskatoon pie note on the cupping table, I knew I had to bring it in. These delicious tart and sweet cooked berry notes cascade  into a nice pastry cake flavour with hints of caramel and chocolate before a nice winey finish with some apple and cherry acidity.  A complex but also cohesive, a perfect celebration profile!
