Or maybe more accurately, 'twas the season? We closed our webstore due to the strike at Canada Post meaning only wholesale accounts had access to our usual holiday coffee. So we decided to ignore the calendar, so everyone can enjoy this unique gem!

What is a Quietly Holiday? Well, I refuse to do blends at Quietly because I always want to celebrate those unique and wonderful elements tied to a single place. Too often, blends operate as a way for the industry to pay low prices for coffee. And yet, I’m very sentimental and want to take part in the holiday blend fun! So, I’m once again bringing in a special coffee that decks the halls and rings the bells when it comes to those nostalgic, sweet, and wonderful holiday baked goods flavours!

ORIGIN:
Jesus 'Chungo' Galeas is a multigeneration farmer who, like most growers in Selguapa, was reliant on sales to local intermediaries for low prices. However, realizing the high level crop quality and driven to hone his craft, he transitioned his farm towards the specialty market. He continues to make improvements by way of an a on-site depulper, solar dryers, and a small bodega for storing his coffee in parchment. One of the most remarkable things about Jesus is his generosity and commitment to help other farmers. He began working with the Honduran Coffee Institute (IHCAFE) with the idea to “motivate all the producers he could to begin working with specialty coffee and to invest in proper farm practices.” Today he works with the always incredible Semilla to export coffee from an network of 30 farms in the area.

FLAVOUR:
This is low oxygen lot, so you can expect lots of vibrant and sticky fruit flavours. But what makes it especially perfect for A Quiet Holiday is all the caramelized sugar notes, think butter tart or pecan pie. And these land over the festive plum acidity of a good pudding and the spicy orange of a fluffy cake. The finish is all ginger and chocolate. It fills me with memories of the long ride home from my Grandmother Allie’s farm. Being slightly too-warm in a winter parka, touching the frost covered car windows, and watching the snowy prairie fields pass by in the night!
