IN THE SUN
NATURAL LOTS:
In The Sun always features naturally processed coffees. These are lots in which fresh cherries are harvested and set out to dry in the sun. By leaving those outer fruit and mucilage layers intact during drying, the seed takes on complex pulpy sugars. This drying typically takes around two weeks with the next stage being ‘hulling’ in which the outer layers are removed before a final wash.
Natural coffees are ‘the perfect starting point’ for people interested in specialty coffee. The processing lends itself to deep fruit-forward flavours, which are easy to pick up and makes ‘taste notes’ far less ambiguous. The cup will have much bigger body than washed processes, and natural lots can even lend themselves to more earthy and robust sensory profiles.
Simple with heavy sweetness, our natural lots are crowd pleasers that will leave you feeling content. As Nirvana’s All Apologies suggests, “In the sun, In the sun, I feel as one.”
ORIGIN:
Tigest Wako inherited her 7.6 hectare farm from her parents. From the start, her focus has been on improving crop quality by new harvesting methods, soil digging, composting, and shifting from older varietals, like Kurume and Dega, towards newer variations, like 74110 and 74112. Her dedication has earned her a spot in the top 150 candidates of Cup of Excellence and she has become a key figure in the areas farming community.
In Ethiopia coffee, the typical or normal traceability is to the large wash stations, where small lots are delivered. However, Tigest comes by way of the single farmer project at Cafe Imports, which enables us to purchase directly from her farm! We brought is in alongside a washed lot from Ocholo Bedecho (featured here: Last Splash) and together, the make for such a fun tasting flight that illuminates the possibilities of direct traceability in sourcing.
FLAVOUR:
Like Ocholo’s coffe, Tigest’s natural lot is so full of hallmark notes. The cup is beaming with big perfume floral notes of honeysuckle and jasmine. There is a nice collection of blueberry, strawberry, and blackberry notes that give way to a winey finish that tastes like red cherry candy with a subtle hint of mild cocoa.
